Every Ovenbell base rests for a full 48 hours before it meets the oven. During that slow, cold fermentation, wild yeasts build flavour compounds that a quick same-day dough simply cannot produce — gentle tang, deeper wheat notes, and a crumb full of airy pockets.

Slow dough is also kinder to digest and far easier to stretch thin without springing back. That is why our crusts blister and char at the edges while staying soft and foldable in the middle.

It takes planning and fridge space, but time is the one ingredient you cannot buy. So we start every pizza two days before you taste it, and we would not have it any other way.
